When red grapes are delivered to the winery it is very useful to have information concerning Phenolic maturation and Hue as well as the usual information on °Brix, pH and acid content. Our company has upgraded the analysis units of the SM series (multiparametric stations), introducing sensors to detect these specific parameters. With this information the oenologist can carry out technological evaluation also based on polyphenols, an evaluation which means optimum delivery selections and the possibility to make the best decisions for enhancing these parameters during the wine-making process. The comparisons carried out between the data provided by the Maselli Units and the wine-making results over the last few years, have confirmed the excellent correlation which exist between the Phenolic Quality measured in the must by our units and the Colour Intensity in the wine produced. It has also demonstrated the correlation between the Hue of the must and the sanitary condition of the grapes themselves. Already a number of wineries are making use of these latest parameters to economically enhance deliveries obtaining two significant results: a more objective evaluation of the delivered grapes and an incentive to wine-growers to produce an ever better quality of grapes.
